New food truck brings tacos, barbecue, soup and more to Springfield

The Backyard Carnivore food truck opened this summer at 2852 W. Republic Road in Springfield.
This is the first food truck venture for owner Dustin O’Neal, a chef with 33 years of experience in the cooking industry.
Backyard Carnivore is not your average food truck. It sells barbecue, tacos, soup and more. O’Neal said first-time customers should try either the rib sandwich or the gut-buster, which is a sandwich with rib meat and smoked andouille sausage.
“It’s what I’ve done all my life,” O’Neal said. “Every day you have to come with a special, my mind is constantly thinking like that.”
With O’Neal’s years of experience as a chef, he is always looking for a new special to add to the menu. Backyard Carnivore has had recent specials like chicken fettuccine alfredo and loaded potato soup.

O’Neal said he had been considering opening a food truck for a long time and finally decided to do it this summer after seeing the success of several other food trucks in Springfield.
“I’m getting old, I might as well leap and just do it,” O’Neal said.
Backyard Carnivore also caters. The food truck often sets up in the backyard at Mother’s Brewing Company on weekends.
“I’m going to try to stay open as long as I can, unless I stick to the ground when I walk out to the truck,” O’Neal said.
