Mom will definitely want to “quiche” the cook who made this tasty baked frittata. Start by filling a baking dish with cherry tomatoes, diced red potatoes, shallots, bacon slices, salt and pepper. Next, thoroughly mix the ingredients. Then bake at 400 degrees Fahrenheit for 20 minutes. Remove from the oven and stir the ingredients again before broiling them on low for 10 to 15 minutes, until there’s a slight char.
